       众所周知环糊精是直链淀粉在芽孢杆菌产生的环糊精葡糖基转移酶的作用下,由直链淀粉产生的一系列环状寡糖的总称,通常含有612个D-吡喃葡萄糖单元。由于环糊精的外缘(Rim)是亲水性的,而内腔(Cavity)是疏水性的,因此它可以提供像酶一样的疏水性结合位点,作为包封各种合适客体(Guest)的宿主(Host),例如有机分子,无机离子和气体分子。基于X射线晶体衍射,红外光谱和核磁共振光谱的结果,确定构成环糊精分子的每个D(+)-吡喃葡萄糖均是椅子构象。每个葡萄糖单元通过1,4-糖苷键连接形成环。由于连接至葡萄糖单元的糖苷键不能自由旋转,因此环糊精不是圆柱形分子,而是略带圆锥的环。

       这种选择性包封通常称为分子识别,其结果是形成宿主-客体复合物。环糊精是一种理想的宿主分子,迄今已被发现与一种酶相似,其中,环糊精的伯羟基形成锥形小口,其仲羟基形成锥形大口。其中,被研究最多且具有实际意义的分子是包含6、7和8个葡萄糖单元的分子,分别称为α-,γ-和β-环糊精,并具有其自身的酶模型特征。因此,在催化,分离,食品和医学领域,环糊精受到了广泛的关注并得到了广泛的应用。
