β-环糊精在食品中的使用情况!

      众所周知β-环糊精在食品中主要用作于稳定剂和加工助剂,一般会用于食品应用中的什么地方呢?

       1、焙烤食品,一般最大用量不超过2.5g/kg。

       2、包埋天然色素、易挥发的香料中使其稳定,香料与β-环状糊精的浓度比例最好是1:1。

       3、去除异味。豆制品除豆腥味,干酪素、甜菊苷除苦味以及羊肉、鱼肉的腥味等。

       4、制作固体酒和果汁粉,饮用时需要稀释。

       5、用于果蔬罐头中,可以防止罐头里汁液产生白色浑浊物。
